Egypt is largely desert, which presents farmers with the challenge of growing in dry conditions. But at the Saint Macarius Monastery between Cairo and Alexandria, the monks have been farming the land for centuries. The monks and their employees grow dates, mangos and other crops as a way of both sustaining the monastery and turning a profit, while confronting the challenge of growing in the desert. But growing sustainably isn't just about the environment, it's about protecting workers too.
