The worker fell in the water, police say, and was trapped under a boat, losing consciousness before being rescued.
He died in a Paris hospital during the afternoon.
Police are looking into the circumstances of the death and the ride has been closed while the inquiry is in progress.
Earlier this year two employees killed themselves but there is no suggestion that this death is suicide.
